Throw some frozen chicken breasts in the toaster oven on a tray with a bit of oil or butter, some minced garlic, salt and pepper. Set to about 350-400, and leave it alone for now. If you are in a big hurry, dice up the chicken into cubes before roasting it. It will only take a few minutes. Let cook a few minutes while doing something else, like setting the table. To expedite cleaning, throw a piece of foil in the bottom of the tray.
Boil some pasta, preferably penne. When the pasta is almost finished cooking, flip the chicken over in the oven. Drain the pasta when it is ready. Mix in a liberal amount of mozzarella and parmesan cheese, more butter or oil, and some tarragon or oregano, depending on your preference. Get the chicken out of the toaster, and pour all the chicken juice, sauce and garlic straight into the pasta. Cut up the chicken into little pieces and mix it all in.
There you have it! An awesome dinner for the family in about 20 minutes or less.

Looks good! Love toaster oven recipes - now that it's just my husband and I at home, I couldn't live without that thing. Saves electricity too.

My sister has a toaster oven that she doesn't want. My parents are visiting her right now, and will be heading to my house next, with the toaster oven to give me!

Hope you'll like it. Just remember if cooking, need to preheat the oven @10 -15 min before you put your dish in. The Toaster oven is awesome for heating up restaurant take home, especially french fries which go soft and droopy in the microwave.

Gillian, I was thinking the same for leftover pizza. Nuking it is just plain yucky! Or hotdogs for the kids after school! I'm sure I'll find a million uses for it. I can't imagine why my sister doesn't want it.

You're right about pizza. Gets soggy and gross in the microwave, but in the toaster oven it's nice and crispy. It's also good for toasting bagels and then melting cheese on them. Yum! This is my first toaster oven, got it about a year ago, and husband was all "what are we going to use that for?" Well, now we hardly ever use our full size oven.

I totally agree! I pretty much only use the large oven for large scale baking or if I am giving a dinner for more than four people. I will even make a roast beef or chicken in the toaster oven if they will fit: less heat in the house, less electricity used, and way less time to heat the oven!

Well, the "toaster" oven my sister didn't want and our parents brought here ended up being a rotisserie thingie. Bummer! Now I'm stuck getting rid of it. I wouldn't use it often enough to justify letting it hog valuable counter space. Maybe I can sell it and apply the money towards a toaster oven.

Pammy go have fun with Mexican food, I made chicken enchiladas last night. What do you normally make. I could write a cook book I think. For my birthday I got the 5 in 5 cookbook and can't wait to make all 120 recipes.

I seem to be stuck in a rut of chili, lasagna, meatloaf, taco salad, breakfast, and a few chicken casseroles I always seem to be making. I just need a few new things to spice up suppertime around here.
